Where is I?Learn the world of wine at The Wine Collective

Hello everyone!

It’s not a “Where’s Marty?” thematic week still and today, a “theme” prevailed. Yesterday it was at the Heavy Sea Brewery. Today it’s The Wine Collective.

Yesterday we saw the result of Hugh Sisson who put everything on the line to create his dream of a brewery. Today we met John Levenberg and Felipe Pallares. Together with Felipe’s brother, Enrique, they went out of their way to make their dream of making wine come true. , bottled and a tapas bar and high-end wines. And they did it in Baltimore.

Hugh Sisson is a boy. John is from Napa, the zenith of winemaking, Felipe and Enrique are from Ecuador and have lived all over the world. So why here?

John, while giving me a tour of the wine factory, explained that it was the perfect combination of climate, topography and culture. In fact, how do we report/visit in “WM?” there is a wonderful culture of distilled beverages and wine in the state.

And the wine component extends south to Virginia, where dozens of vineyards are located. And John would know. His pedigree is Napa. But the city of Baltimore. We would possibly have bad press in those days, but their selection says a lot. They believe!

The Wine Collective, Est. 2019, sources locally sourced grapes for its product. (By the way, that unfermented grape juice that made me look just fabulous!) Whites are made now and reds at the end of the month or early. Octubre. La harvest determines it. Eight months later, the bottles are full and then the smart times begin.

Combine the look of the industry with a European-style tapas bar and lounge, and the entire Wine Collective dish is ready. And it’s wonderful to see it. Because his dream survived COVID. Created in 2019 and they are still there. The hard paints and the refusal to lose kept the dream alive.

Here’s the online page: check it out, and if you need to check it out, pass it on. The Union Collective, which is just off 41st Street near TV Hill, has plenty of loose parking. They made carpets, so go ahead.
