Golden Chips operates with a Caridi team: Patricia Caridi (mother), Giacomo Caridi (brother), Glenda Rivera Caridi (sister-in-law) and Merely Robertson (sister), who are also partners in the company.

Belgian fries are the base of the menu, but the circle of relatives continues to expand it with homemade recipes.

“We call it Belgian because we fry them twice and cut them thick, which will make them comfortable on the outside but crispy on the outside,” Giancarlo Caridi said.

Golden Chips’ fries are served to visitors in a cone-shaped container with a mayonnaise-based sauce look, which is a trend in Europe, he said.

“We started with Fries. French fries and sauces. The concept that you take your chips and you walk around and eat them,” he said.

Golden Chips are presented on a homemade wooden stand with a slot for the sauce.

The cassava fries were added at the suggestion of his sister-in-law, who is from Honduras, and were a hit, he said. And the popularity of sweet potato chips in the United States has led to them being included in the offerings.

A collection of signature sauces completes the dishes. The most popular is criolla, a Sauce inspired by Louisiana. The samurai is made with pink mayonnaise – a mayonnaise combined with tomato paste – and tabasco. Chipotle, made with pink mayonnaise and chipotle peppers, is another spice favorite. Aioli is a garlic mayonnaise sauce.

Even mustard with honey is made with a recipe.

Classic barbecue, ranch, cheddar cheese, tartar sauce and ketchup are available.

Customers shared their love of salsas, which led to the resolution to add more sauces to the menu. Breaded bird fillets were introduced in New Orleans and fish sticks. The menu continues to evolve and grow.

In 2014, Golden Chips was turned into a food trailer in the family’s home country of Guatemala. A brick-and-mortar eating place worked briefly in a mall but closed.

In 2016, they opened a store in New Orleans’ French Quarter, where the circle of relatives resided, but closed at the height of the COVID-19 pandemic due to low visitor traffic and high rents, Caridi said.

Caridi’s nephew moved to Asheville and advised the circle of relatives to do the same.
