His impressive rise in New York City kitchens brought him to Dallas as the inaugural chef of Uchi and Mirador (now open again after a long closure due to COVID-19). ). Borges’ new chef job, at the Brazilian-American restaurant Meridian in East Dallas, “exalted Bahian, Brazilian and global flavors,” Food said

He’s right: Borges’s Brazilian-American point of view at Meridian had never been in Dallas. But sadly, he left Meridian in October 2023.

The Fort Worth Opening Dinner returns Friday, May 17 at McDavid Studio and Bass Performance Hall.
