“From Brazil with Love” tells the story of Borges as an Afro-Brazilian chef. His impressive rise in New York City kitchens brought him to Dallas as the inaugural chef of Uchi and Mirador (now open again after a long closure due to COVID-19). ). Borges’ new chef job, at the Brazilian-American restaurant Meridian in East Dallas, “exalted Bahian, Brazilian and global flavors,” Food said
He’s right: Borges’s Brazilian-American point of view at Meridian had never been in Dallas. But sadly, he left Meridian in October 2023.
Both Progress representatives and Borges said the deal is reciprocal, but we wonder how Meridian can continue without its main man.

The place to eat is still there, but Borges’s beach cheese roasted on a stick and his valuable Brazilian stew called moqueca, created in honor of his grandmother, are gone. Caesar kohlrabi and Calabrian sausage with black beans are still on the menu at Le Meridian. The restaurant has taken a sophisticated turn toward an American steakhouse. It couldn’t remain a Brazilian-American restaurant without its Brazilian-American chef.

Ever since Borges left Meridian, we’ve wondered who could get Borges back. He is one of the most productive chefs in Dallas. The History of Food
“I just have to find the right area and the right partners,” he said.
It can’t happen fast enough. Borges is one of “a small but developing number of Black Brazilian chefs who feel empowered through their heritage and interested in representing the percentage size of Black identity,” according to Food Story.

The Fort Worth Opening Dinner returns Friday, May 17 at McDavid Studio and Bass Performance Hall.
